Roasted Brussels Sprouts with Garlic and Lemon

 

Ingredients:

  • 1 pound Brussels sprouts
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 lemon (for juice and zest)
  • Salt and pepper to taste

Instructions:

Preheat the Oven:

  • Preheat your oven to 400°F (200°C).

Prepare the Brussels Sprouts:

  • Rinse the Brussels sprouts under cold water.
  • Trim off the tough ends of the Brussels sprouts and remove any yellow or damaged outer leaves.
  • Cut the Brussels sprouts in half lengthwise.

Season the Brussels Sprouts
:
  • Place the halved Brussels sprouts in a large mixing bowl.
  • Drizzle 2 tablespoons of olive oil over the Brussels sprouts.
  • Add the minced garlic to the bowl.
  • Season with salt and pepper to taste.
  • Toss the Brussels sprouts until they are evenly coated with oil, garlic, salt, and pepper.

Arrange on a Baking Sheet:

  • Spread the seasoned Brussels sprouts in a single layer on a baking sheet. Make sure they are not overcrowded to ensure even roasting.

Roast in the Oven:

  • Place the baking sheet in the preheated oven.
  • Roast the Brussels sprouts for 20-25 minutes, stirring halfway through, until they are golden brown and crispy on the edges.

Prepare the Lemon:

  • While the Brussels sprouts are roasting, zest the lemon and set the zest aside.
  • Cut the lemon in half and juice it, setting the juice aside.

Finish the Brussels Sprouts:

  • Once the Brussels sprouts are roasted, remove the baking sheet from the oven.
  • Drizzle the roasted Brussels sprouts with the lemon juice.
  • Sprinkle the lemon zest over the top.

Serve:
  • Transfer the Brussels sprouts to a serving dish.
  • Serve immediately while hot and enjoy!

Tips:

  • For an extra flavor boost, you can sprinkle some grated Parmesan cheese over the Brussels sprouts before serving.
  • If you prefer a bit of heat, add a pinch of red pepper flakes to the seasoning mix before roasting.
